This 2-ingredient Shiitake Brown Rice makes for an easy side dish packed with umami flavor.
Mushrooms are both delicious and nutritious. So much so, I recommend my students and clients to add in them to their plate on a regular basis.

Shiitake Brown Rice
Ingredients
- 1 cup brown rice
- 2½ cups water
- 1 cup shiitake mushrooms caps only, sliced thin
- unrefined salt (real, pink, or Celtic salt) to taste
- Black Pepper to taste
Instructions
- Heat a medium-sized pot over medium heat. Add the rice, water and mushrooms. Bring to a boil, then reduce heat, cover, and simmer until all the water is absorbed (about 30 minutes).
- Season with salt and pepper to taste.
